Salted Watermelon + Lime Soda

The drink of the summer — naturally sweetened with our UMF™ 10+ Mānuka honey for a golden immune boost as the days get warmer and longer.

Light, hydrating, and a little bit salty-sweet, this refreshing soda is one you’ll keep on repeat all season long.

Serves: 3 cups  Time: 10 minutes

Base

  • 4 cups watermelon — skin removed and chopped into small chunks

  • ½ cup lime juice

  • 2 tbsp UMF™ 10+ Mānuka honey

  • ½ tsp sea salt

Salt Rim

  • ½ lime — cut into wedges

  • ¼ tsp chilli flakes (optional)

  • 2 tbsp sea salt

To Serve

  • 3 cups ice

  • 1 lime — sliced into wedges

  • 3 cups soda water

Method

  1. Blend the watermelon, lime juice, Mānuka honey, and sea salt until smooth. Strain through a fine sieve to remove pulp and store the watermelon–lime base in a sealed jar in the fridge for up to one week.

  2. Prep the rims: Rub a wedge of lime around each glass rim, then dip into a small plate of sea salt and chilli flakes.

  3. Assemble: Fill each glass with ice. Pour in equal parts soda water and watermelon–lime base, stirring gently to combine.

  4. Garnish with a lime wedge and enjoy immediately — best served in the sunshine. 

Simple Swaps & Additions

  • Add a splash of gin for an easy summer cocktail.

  • Swap the watermelon for rockmelon, honeydew, or pineapple.

  • Replace lime with lemon for a softer citrus hit.
