Chicken, bacon and avocado salad with mānuka honey dressing

This vibrant chicken and spinach salad is full of flavor and balanced nutrition — paired with a tangy-sweet homemade vinaigrette that gets its richness from pure, New Zealand Mānuka honey. Salad Ingredients
- 1-2 cups spinach
- 2 slices bacon, cooked and diced
- ½ cup diced (or shredded)cooked chicken
- Handful of chopped capsicum
- ½ avocado, peeled, pitted and diced
- ⅛ cup of dressing, to serve (see recipe below)
Dressing Ingredients
- 3⁄4 cup olive oil
- 1⁄4 cup apple cider vinegar
- 2 tbsp water
- 2 tbsp mānuka honey
- 1 1⁄2 tsp salt
- 1⁄4 tsp pepper
To make the salad:
- Combine the spinach, bacon, chicken, capsicum and avocado together in a bowl. Drizzle evenly with the dressing, and toss to combine.
To make the dressing:
- Combine vinegar, water, honey, salt and pepper in a blender.
- Drizzle olive oil into blender while blending until combined.
- Store in an air tight container in the fridge.
