Ingredients:
For the Mānuka Miso Dressing:

- 2 tbsp white miso paste
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp grated ginger
- 1 tsp garlic, minced
- 1-2 tbsp water (to thin the dressing to your desired consistency)

- 1 cup sushi rice, cooked and cooled
- 200g fresh tuna or salmon, cubed (or tofu for a vegetarian version)
- 1/2 cucumber, thinly sliced
- 1 small carrot, julienned
- 1 avocado, sliced
- 1/4 red onion, thinly sliced
- 1-2 tbsp sesame seeds
- 1 sheet nori, cut into strips
- Pickled ginger, for garnish (optional)
- Fresh coriander, for garnish
